					<description><![CDATA[Juan Cúneo Solari founded Casas del Bosque in 1993, at a time when the Chilean wine industry was pursuing quantity over quality.

A great Chardonnay from the cool Casablanca Valley, recognized as one of the best places in Chile for this variety. Ungrafted vines of the “Mendoza” clone planted on Tapihue Sandy Loam and Santa Rosa Clay Loam soils between 1997 and 2003. The vineyard is 18 km from the Pacific Ocean at 250 m altitude.

Full and dry, with a rounded mouthfeel and good length.</p>
<p><strong>AGEING</strong><br />
The wine undergo malolactic fermentation and is then stored in French oak barrels, both new and used, for 10 months.</p>

Pasta and seafood such as Ravioli stuffed with crab and ricotta with basil pesto. And cheeses such as camembert, goat cheese and fontina.</p>

					<description><![CDATA[Juan Cúneo Solari founded Casas del Bosque in 1993, at a time when the Chilean wine industry was pursuing quantity over quality.

Coming from 10-15 year old vines planted in red granite hillside soils, located within the coldest and western areas of the Casablanca Valley, 18 km from the Pacific Ocean and at 250 m altitude in the single vineyard of Las Dichas.

The ripening season of 2023 was warm and sunny, therefore there is structure and potential to evolve through time, but at the same time the wine could be enjoyed soon, as warmer vintages imparts a moderate acidity.

<p><strong>APPEARANCE</strong><br />
Color is dark ruby and concentrated.</p>
<p><strong>NOSE</strong><br />
On the nose aromas of strawberries and raspberries combine with darker fruit and are integrated with tertiary oaky spices.</p>
<p><strong>PALATE</strong><br />
On the palate the wine is medium bodied, with an elegant structure. Tannins are soft but impart a grip and enhance drinkability, with structure and potential to evolve.</p>
<p><strong>AGEING</strong><br />
The wine was drained in a mix of new and second use American barrels for 10 months.</p>
<p><strong>PAIRING</strong><br />
Idealy served with food with a touch of spice, such as crispy duck, pulled pork or seared salmon. Perfect paring with mushrooms risotto, cooked beetroot dishes or ones that contain figs. Goat cheese as well.</p>

The fruits for La Cantera Sauvignon Blanc come part from the red sandy loam soil of “Lo Vásquez” planted on a hillside and part from Olivos Camino's vineyard located 18 km from the Pacific Ocean at 250 meters of altitude. The vineyard is located in the coldest and western part of the Casablanca Valley.

This La Cantera 2023 is an outstandingly aromatic wine, which delivers the true cool climate expression of its site.

The aromatic sensation is defined, pristine, pure and intense, based on grapefruit notes combined with passion fruit and boxtree.</p>
<p><strong>PALATE</strong><br />
The taste is dominated by tropical and citrusy notes, with a vertical and dynamic acidic sensation that emulates a sense of direction on the palate.</p>
<p><strong>AGEING</strong><br />
All components undergo 2 months of élevage on inactivated yeasts before blending.</p>
<p><strong>PAIRING</strong><br />
Ideally served with shellfish like oysters or with grilled fish. Herbs like chives, cilantro or parsley. Green olives, chutney and all types of goat’s cheese. Try it with aromatic and spicy Asian cuisine as well.</p>

A blend of 11 to 16 year old vines sourced from hillside blocks with northern exposure, planted on 110 million year old decomposed granite with a thin topsoil of red, iron-rich clay.

Deep garnet in colour with a purple hue.</p>
<p><strong>NOSE</strong><br />
A cooler vintage that showcases more the dark fruits instead of the red ones. Black<br />
olives and meaty notes well combine with tertiary scent of goudron and toffee. A floral note, reminiscent of violet, shows up after some second from opening.</p>
<p><strong>PALATE</strong><br />
Vibrant, alive, elegant cool climate Syrah. Smooth tannins with a clean and a clean finish. Will reward careful cellaring.</p>
<p><strong>AGEING</strong><br />
The wine was drained to French oak barrels (20% new) for 12 months.</p>
<p><strong>PAIRING</strong><br />
Fatty meat such as lamb ribs or lamb shank, accompanied with roasted potatoes and rosemary and pepper.</p>
