<p><strong>NOSE</strong><br />
This Cabernet Sauvignon embodies a fruitdriven wine with rich notes of blackcurrant, plum, and morello cherry.</p>
<p><strong>PALATE</strong><br />
Touches of oak, chocolate, and vanilla bean complete the rich round palate. A muscular wine with good layers of spice and a nice dry finish to the tannins. Still plenty of youth and vibrancy in tightly coiled package.</p>
<p><strong> AGEING</strong><br />
Fermentation completed in barrel, with 18 months’ maturation, followed by individual barrel selection.</p>
<p><strong>PAIRING</strong><br />
A good old scotch fillet in peppercorn sauce would be a treat alongside it.</p>

Optimal vineyard soils comprised of thin layers of rich red loams over ancient limestone provide the bare requirement for growth without indulging the grapevine’s natural tendency for vigour. Hungry soils combined with rigorous hand pruning restrict yields to ensure richly flavoured fruit. 					<description><![CDATA[In March 2002 the DiGiorgio Family became the proud owners of the second oldest winery in Coonawarra. This winery had been known since the early 1950’s as ‘Rouge Homme’ and holds enormous importance within the ‘winescape’ of Australia. The 13.5ha of mature vineyard surrounding the winery is planted on the famous ‘terra rossa’ soil of Coonawarra. These old vineyards have provided the DiGiorgio Family with an invaluable source of premium grapes for their Coonawarra label.

The 2022 vintage saw average yielding with perfect ripening conditions. This enabled excellent concentration of fruit characters resulting in a rich, full bodied wine.

<p><strong>APPEARANCE</strong><br />
Deep crimson, almost opaque with purple highlights.</p>
<p><strong>NOSE</strong><br />
Dark fruits of blackcurrant, blackberry and blood plum combine with cedar spice on the nose.</p>
<p><strong>PALATE</strong><br />
Full bodied, dense and concentrated, with fine tannins which provide seamless line and length. The 2022 vintage saw excellent concentration of fruit characters resulting in a rich, full bodied red wine.</p>
<p><strong>AGEING</strong><br />
18 months in French and American oak barriques and hogsheads; 35% first use, 35% second use, 30% older.</p>
<p><strong>PAIRING</strong><br />
Enjoy it with char grilled rib eye steak.</p>
<p><strong>READINESS FOR DRINKING</strong><br />
It is ready to consume now, though it will drink well for at least 10 years.</p>

					<description><![CDATA[In March 2002 the DiGiorgio Family became the proud owners of the second oldest winery in Coonawarra. This winery had been known since the early 1950’s as ‘Rouge Homme’ and holds enormous importance within the ‘winescape’ of Australia. The 13.5ha of mature vineyard surrounding the winery is planted on the famous ‘terra rossa’ soil of Coonawarra. These old vineyards have provided the DiGiorgio Family with an invaluable source of premium grapes for their Coonawarra label.

Deep crimson with purple hues.</p>

This elegant Shiraz has ripe raspberry and cracked pepper on the nose.</p>
<p><strong>PALATE</strong><br />
The 2021 has a full bodied with chocolate and spice on the palate, finishing with smooth and velvety tannins and toasty vanilla oak. Time in bottle will see even more complexity develop, with an increase in cedar and savoury characters.</p>
<p><strong> AGEING</strong><br />
18 Months in French and American oak, 35% first use, 65% second use.</p>
<p><strong>PAIRING</strong><br />
Try with chargrilled lamb and baby eggplant.</p>
<p><strong>READINESS FOR DRINKING</strong><br />
It will cellar well in appropriate conditions for 8-10 years.</p>
