					<description><![CDATA[The fruit for the Hedonist Shiraz is predominately estate grown on our organic/biodynamic certified vineyard situated in the Willunga foothills, McLaren Vale. Fruit is also sourced from the Sellicks Foothills, Blewitt Springs and Kangarilla, all from vastly different soil profiles and aspects across the district. The idyllic St Vincent’s Gulf with it’s cooling sea breeze lies just to the West of the valley.

A very dry winter and spring, coupled with record heat and dry conditions throughout summer led to an early and condensed vintage. The conditions lent themselves to smaller berries with good concentration of flavour.

Lifted nose of red berries, blueberries, liquorice, nutmeg and a touch of freshly cracked black pepper.</p>
<p><strong>PALATE</strong><br />
Red berries carry through with refreshing, crunchy acidity.<br />
Firm tannins build structure while adding length to the bright and juicy<br />
palate.<br />
The final exhibits exceptional balance with a smooth, velvety mouthfeel.</p>
<p><strong>AGEING</strong><br />
Matured in oak for 15 months before final blending and bottling.<br />
No fining.</p>
<p><strong>PAIRING</strong><br />
Rich enough to stand up the strongest lamb or any red meat but equally enjoyable as a robust red on its own.<br />

					<description><![CDATA[The fruit for the Hedonist Cabernet Sauvignon is grown biodynamically on the estate vineyard situated in the Willunga foothills, McLaren Vale. Warm Summer days are cooled by evening sea breezes from St Vincentís Gulf, which lies a close proximity to the West. The soil is rich loam over clay with patches of underlying limestone, giving the wine a rich and fullness of pallet.

The 2021 ripening season was met with average rainfall for the first time in at least 3 vintages. Not only did McLaren Vale experience a wet winter, but also a luscious spring and a significantly cooler summer. This created magnificent ripening conditions from fruit set and flowering through version to final ripening.

<p><strong>APPEARANCE</strong><br />
Deep red with purple hues.</p>
<p><strong>NOSE</strong><br />
Briary notes of wild blackberries and rich truffle are complemented by hint of nutmeg.</p>
<p><strong>PALATE</strong><br />
A generous middle palate, with mulberries, chocolate and subtle nutmeg undertones. Long, proud tannins augment the structure and builds texture.</p>
<p><strong>AGEING</strong><br />
Fermented without crushing, maintaining some whole berry fermentation. A cool ferment was maintained using indigenous yeast for 12 days on skins and then racked into 85% French Oak foudre (3-year-old) and 15% new French oak puncheons for 15 months.</p>
<p><strong>PAIRING</strong><br />
Well-seasoned roast chicken, or game dishes.</p>
