					<description><![CDATA[The Domaine de Fiervaux was born from a family farm established in Saumurois with 4ha of vines, and taken over in 1890 by Henri Maitreau. 40 years later, his son Jules succeeded him, constantly improving the vineyard. In 1960, Georges Cousin and his wife Juliette Maitreau, daughter of Jules, took over the reins and developed the estate, hence the origin of the name Cousin-Maitreau, developing the vineyard from 8 ha to 28 ha with the planting of several grape varieties in order to create a wide range.

Alcohol 13.5%</p>
<p><strong>APPEARANCE</strong><br />
Clear and brilliant, cherry-colored.</p>
<p><strong>NOSE</strong><br />
Light and fresh, with aromas of red fruit (blackcurrant, raspberry, wild strawberry) and violet.</p>
<p><strong>PALATE</strong><br />
The lively attack opens on a peppery, acidic side. The palate is supple, aromatic and round with notes of red fruit. A delicious, convivial wine.</p>
<p><strong>VINIFICATION</strong><br />
After harvesting, the grapes are placed in tanks for pellicular maceration during 15 days. Tannins develop and aromas are enhanced. A second fermentation takes place in tanks to ensure the wine&#8217;s stability.</p>
<p><strong>PAIRING</strong><br />
For aperitifs, cold meals, grilled meats, white meats, cold meats.</p>

The nose expresses an olfactory profile of unmistakable territorial origin, all played on citrus notes, grapefruit and lemon, and mentholated hints followed by scents of chamomile, hay and white peach.</p>
<p><strong>PALATE</strong><br />
Elegant, fine, wonderfully defined also in the mouth, where freshness and acidity chase each other until a soft and long finish.</p>
<p><strong>AGEING</strong><br />
Fermented in concrete tanks, where a short aging of a few months also continues.</p>
<p><strong>PAIRING</strong><br />
Throughout the meal, this Saumur Blanc is enhanced with simple and fresh fish-based dishes, such as tuna tartare, sushi, sashimi, smoked trout and oysters.</p>
