The origin of “La Trampa” dates back to the early 2000’s, when the dream of the “Great Chilean Cool - Climate Red” began to take shape through an innovative proposal of planting low-yielding Syrah on granitic soils at the top of the hills. Later, advances in topography and knowledge of the vineyards led the team to plant Malbec in the same soils and in another part of the hill facing east, where the best Pinot Noir were already cultivated.

This version of La Trampa is marked by an increasing role of Malbec in the blend and gives a perfumed wine with silky tannins, while the Pinot Noir balances the intensity of the Syrah and Malbec with its lightness.</p>

Ageing for 18 months in a mix of first-use, second-use and third-use French oak barrels. 25% of the blend was stored for 18 months in truncated cone-shaped concrete tanks.</p>
<p><strong>PAIRING</strong><br />
Idealy serve d with lamb chops, spicy pork meat or black pudding. Very good with nutty and sharp cheeses like goat’s cheese, but also brie or even smoked blue cheese.</p>

Carménère originates from the Bordeaux region of France. However, Chile is currently the main producer of this grape variety worldwide. The grapes come from alluvial loam soils with good drainage towards the Cachapoal river in Almahue, in the commune of Peumo, which has traditionally been recognized for the quality of its Carménère. The variety was harvested during the first fortnight of April, seeking a balance between the herbaceous compounds typical of the variety and its fruity notes.

It offers aromas of cassis, raspberry, black cherry, graphite with a hint of mint herb typical of the grape&#8217;s origin. After aeration, spice, cedar and coffee bean notes emerge.</p>
<p><strong>PALATE</strong><br />
On the palate, flavors evolve, all framed by the tannins. A ripe, elegant tannin gives the wine a sense of direction on the palate. As the wine spreads, it reveals its harmonious structure, giving the impression of a mousse.</p>
<p><strong>AGEING</strong><br />
The wine was racked and placed in a blend of new (30%) and second/third use French oak barrels where it was aged for 18 months.</p>
<p><strong>PAIRING</strong><br />
Excellent with grilled and roasted red meat, rich, savory dishes and aged cheeses.</p>

					<description><![CDATA[Juan Cúneo Solari founded Casas del Bosque in 1993, at a time when the Chilean wine industry was pursuing quantity over quality.

Coming from 10-15 year old vines planted in red granite hillside soils, located within the coldest and western areas of the Casablanca Valley, 18 km from the Pacific Ocean and at 250 m altitude in the single vineyard of Las Dichas.

Due to a warmer 2024 growing season, the winemaking team dialed back oak usage to better highlight the fruit's natural quality, resulting in a ripe yet fresh expression of the variety.

A complex nose where primary aromas of strawberry and raspberry blend with darker fruits like blackberry and plum, accented by tertiary spices of cinnamon, toasted nuts, and a hint of bourbon.</p>

The wine is medium-bodied with an elegant structure and soft tannins that provide a grip to enhance drinkability. Vibrant acidity and a distinctive saline aftertaste typical of its cool-climate, granitic soil origin.</p>

Aged for 10 months in a mix of new and used American and French oak barrels.</p>
<p><strong>PAIRING</strong><br />
Recommended with slightly spicy dishes such as crispy duck, pulled pork, or seared salmon. It pairs exceptionally well with mushroom risotto, cooked beetroot dishes, or preparations containing figs.</p>

The fruits for La Cantera Sauvignon Blanc come part from the red sandy loam soil of “Lo Vásquez” planted on a hillside and part from Olivos Camino's vineyard located 18 km from the Pacific Ocean at 250 meters of altitude. The vineyard is located in the coldest and western part of the Casablanca Valley.

This La Cantera 2024 is an outstandingly aromatic wine, which delivers the true cool climate expression of our vineyard, located
in Las Dichas, the coldest end of the Casablanca Valley. The sensation of "saltiness" on the back palate speaks of Las Dichas'site.

The aromatic sensation is defined, pristine, pure and intense, based on grapefruit notes combined with passion fruit and boxtree.</p>

The taste is dominated by tropical and citrusy notes, with a vertical and dynamic acidic sensation that emulates a sense of direction on the palate.</p>
<p><strong>AGEING</strong><br />
All components undergo 2 months of élevage on inactivated yeasts before blending.</p>
<p><strong>PAIRING</strong><br />
Ideally served with shellfish like oysters or with grilled fish. Herbs like chives, cilantro or parsley. Green olives, chutney and all types of goat’s cheese. Try it with aromatic and spicy Asian cuisine as well.</p>

The tannins are ripe and well integrated, resulting in a dense and concentrated wine of good length. Intense,mature and complex yet elegant.</p>
