					<description><![CDATA[The story began with Michel Chapoutier, a unique man with a thirst for knowledge, definitely one of a kind. He seeks to discover and reflect the full potential of his terroirs and let the soils express their true character.
This now forms the basis of the M. CHAPOUTIER ethos to reveal the very best of what the soils have to offer.

The Saint-Joseph appellation extends around fifty kilometres on the right bank of the River Rhone, from Chavanay in the north to Guilherand-Granges, near Valence, in the south. The mainly-east facing vineyards are planted on the steep slopes of gneiss and local granite schist, occasionally coated with lenses of loess. This variety of substrates enables to combine complexity, volume and tautness in both Deschants whites and reds.

<p><strong>APPEARANCE</strong><br />
Pale yellow with green lights.</p>
<p><strong>NOSE</strong><br />
Mineral nose, with gun-flint (characteristic of the granitic soil), roasted aromas, hint of dried fruits.</p>
<p><strong>PALATE</strong><br />
Frank and round attack with a floral and honeyed finish.</p>
<p><strong>AGEING</strong><br />
A part of the wine is vinified in oak casks and the other part in stainless vats.<br />
Ageing is carried out on lees with stirrings.<br />
The two wines are blending just before bottling (8 to 9 months after harvesting).</p>
<p><strong>PAIRING</strong><br />
Fresh water fish and soft goat&#8217;s cheese.</p>

Pale yellow with green lights, limpid and brilliant.</p>
<p><strong>NOSE</strong><br />
Very floral with notes of green apple, exotic fruits and citrus aromas.</p>
<p><strong>PALATE</strong><br />
The attack is supple with a lot of freshness, very aromatic with typical floral and mild candied fruits notes.</p>
<p><strong>AGEING</strong><br />
The fermentation and ageing of this wine takes place in vats. Malolactic fermentation is blocked to give freshness to the wine.</p>
<p><strong>PAIRING</strong><br />
All fish dishes, poultry and white meats, Asian dishes and medium aged cheeses.</p>

With his pioneering spirit, Michel Chapoutier set off to discover the terroirs of the oldest continent, with an idea: growing Rhone grapes in Australia. This was the beginnings of a tremendous voyage of discovery, observation and eventually, affection for that land. On what he found to be very special terroir, he planted non-grafted vines from 19th century clonal selections, imported from Europe before phylloxera took its toll. The non-negligible advantage was that in Australia, the harvest coincides with the French spring: ideal timing.
