On the nose an explosion of sour cherry, ripe red fruit, blueberry, orange rind and flowers blends with spices, aromatic herbs, tobacco, coffee, dark chocolate, licorice and pepper.</p>
<p><strong>PALATE</strong><br />
Full-bodied, rotund, perfectly balanced with velvety warmth. The sip is solid, supported by freshness and fine tannins.</p>
<p><strong>AGEING</strong><br />
In the middle of winter the dried grapes are pressed and the thick juice is let to ferment for a long time. Follow 36 months of ageing in 30-50hl oak barrels and ageing in bottle.</p>
<p><strong>PAIRING</strong><br />
Long drying and refinement time require dishes cooked for long time, high intensity and aromatic aftertaste.</p>

Classic in its olfactory expression, with ripe red fruit, cherry in alcohol, flowers, licorice, undergrowth and spices.</p>

In the mouth, the sip is well defined and tends to be juicy, with good tannic structure and round and crunchy fruitiness enhanced by a savory acidity, which gives rhythm and thickness.</p>
<p><strong>AGEING</strong><br />
In the middle of winter the dried grapes are pressed and the thick juice is let to ferment for 30-40 days in stainless steel tanks. After comes a long ageing in 30-50hl oak barrels.</p>

Its aroma evokes red ripe fruits preserved in spirits, cherry, chocolate, black pepper, vanilla and coffee.</p>
<p><strong>PALATE</strong><br />
A fruity red wine with a medium body and a dominant acidity, which harmoniously develops its complex structure with finely mature tannins on the tongue and palate.</p>
<p><strong>AGEING</strong><br />
After being hand-picked, the grapes dry for about 4 months in our dry cellar. Then the fermentation takes place and the wine is aged in 50 hl oak barrels for 18 months.</p>
<p><strong>PAIRING</strong><br />
This wine pairs excellently with stews or <em>brasato</em> (meat stewed in red wine), and all dishes with high aromatic persistence.</p>

					<description><![CDATA[Originally Venetian wine traders in 1912, the Fabiano family moved to Verona in 1956 to produce wine on a larger scale, sourcing fruit from Estate and contract vineyards in Soave, Bardolino, and Valpolicella.

Produced by a careful selection of local grapes from the high hills vineyard located in the classic area of the Valpolicella DOC region, in particular around the ancient village of Negrar, this Amarone is a wine of antique lineage. It is a limited production dedicated by Nicola Fabiano to his grandfather Francesco and to his father Sergio. They have been for their children and in particular for him (Nicola) an inspiration and a good example with their passion and tenacity in producing great quality wines.

Intense bouquet with notes of black cherry, red fruits, blueberry, spices and rhubarb.</p>
<p><strong>PALATE</strong><br />
This is a full and rounded wine, with great structure. The alcohol content is balanced with velvety tannins and guarantees excellent drinkability with tertiary and balsamic notes.</p>
<p><strong>AGEING</strong><br />
The wine is re-fermented 5-6 days over the marcs of Amarone and is then left to mature in large oak barrels for 24 months.</p>
<p><strong>PAIRING</strong><br />
The perfect wine for the whole meal and particularly suited to roasted meats and grilled T-bone steaks.</p>

					<description><![CDATA[The brand Le Preare was created by Cantina Valpolicella Negrar to pay tribute to a history, where previous generations very often paid a very high price, allowing todays generation of vine growers to benefit from the hard work of their forefathers.
Located in the heart of the Valpolicella Classico, this area was also known for its prestigious stones, such as the red marble of Verona. It was widely used by the Venetians when building their villas. However, the use of other local stones, less prestigious then marble, was wide spread. The antique mines where the stone was taken, were called “preare” in local dialect. The local stones were used to separate the vineyards and also to build the terraces, allowing the vines to grow also on steep slopes.

The history of this wine is old, it dates back to the ancient Romans and the famous wine Retico highly praised and appreciated by the Latin poets. Symbol of the viticulture of the Valpolicella Classica based on the particular process of the naturally withering of the grapes, is considered to be origin of the Amarone.

After a drying period in stores for 120 days and vinification, it follows a refinement in stainless steel vats for 6 months and then in bottle for 4 months.</p>

All types of dry biscuits like cantucci, herbal or spiced cheeses, chocolate and fruit spiced sauces.<br />

“Appassimento” is made from indigenous red grape varieties. Following a thorough and rigorous blending process, both the appassimento and traditional methods are fused together in the production of this fine red wine.
